Description

Bison tenderloin is the healthiest of the tenderloins.  Roasting or grilling whole would be an excellent way of cooking this.  Rubbing it with garlc, thyme and chervil would work very well.  Because of the low fat content of bison, I would recommend not cooking past medium, it can get dry.

Notice that bison gets a slightly better score than beef.  Not much, but is a healthier choice for you than beef.  Buffalo does have high amounts of cholesterol.  Although it is less in fats (saturated fats to be exact).  Just remember your bullet proof shield with portions and combination and you will be okay to consume this.  Buffalo does not aid in the metabolic raise, but when eaten correctly will not cause you to gain.
