It is always best to choose meats that are organic, free roaming, grass fed, hormone free, etc when eating clean for Phase 4

Lamb tenderloin is a healthier choice than beef tenderloin.  Treat as the same way, but recommend you not cook past medium.  Lamb tends to really dry out and become chewy when over cooked.  A perfect accompaniment is butternut squash and/or swiss chard.

Lamb must be treated like beef in all ways. Due to the higher fat content and higher cholesterol content, it is a product that would not be recommended to eat over and over.  It is also higher in calories than your category I meats.  Remember your combinations and portions when dealing with this category IV meat.
