Mollusks like clams and mussels are perfect for soup style dishes.  Its not really a soup, but a very liquid sauce that helps steam and cook them.  Like adding a little fennel, parsley, and brussel sprouts with chicken stock and lemon juice, maybe a little white wine if you're under your condiment amount and let all that cook the mussels.  All the flavors are absorbed into the meat.  Toss in some fresh spinach at the end.
